Parmo's in the South

I just want to say, having moved South a few years ago, there are a few things I miss.

One is being able to get a parmo with a beer when I've had a crap day.

Well, there is a restaurant here that has just started doing them (Thursday nights only) as a trial, and I am absolutely made up. Its just a little reminder of home and a bright spot in this crappy lockdown.

If only it was true! I plan to visit my Dad in Redcar over Easter so will get my Parmo fix along with the best Fish and Chips.
They are easy enough to make. If you can't do that get some premade ones from Goodswens when you come back to Redcar. You can freeze them and they are all separated so they don't stick together in freezer. Only do Chicken not Pork unfortunately. You just have to make a simple Béchamel sauce and cheese topping then. Couldn't be easier.

Buy a bag load freeze them at your dads and they will be still frozen when you get home. Or buy them on the morning of your departure and freeze them when you get back to the Big city.
