Canary Islands Advice please

Wife and I usually have a late September holiday in Greece but can't this year due to a recent operation.

Looking to go away prob late October/November so Canaries the obvious choice. We've never been before so any advise appreciated. I've heard it can be windy which wouldn't be good. Really looking for smaller resort, good restaurants and bars, harbour etc, definitely not a very rowdy place. Not really bothered about the Beach, we'll hire a car and do boat trips etc. Good hotel with pool in central location.

Any advice on Island/Resort/Hotel appreciated, I've googled etc but going round in circles with too much conflicting info.
Fanabe (Costa Adeje) in Tenerife is the best resort we‘ve been to in the Canaries, followed by Corralejo on Fuerteventura. Both with more to do, more choice, better shopping, than the usual Canaries resort.
I know a number of people who have retired to Fanebe so that says something.

Caleta de fueste Fuerteventura is a nice place and worth considering , Corralejo is also supposed to be good.
Puerto del carman is one of my favourites . May try playa Blanca after reading this , been for a quick visit and didn't think it seemed big and busy , but must have changed a bit so will have a look.

Going back to Fuerte in December.
We always stop in Costa Antigua...cheaper than Caleta De Fuste but it's within walking distance of it.

Fado Rock in Caleta De Fuste is the best steak house in the Canaries.
