Cooking Christmas Dinner

The boy got over his covid and the new rules means Xmas is back on track :)

So I'm cooking for 13 tomorrow

My sister says to cook the turkey upside down, then turn it right side up for the last hour to brown the skin. I might give it a go this year.

I just hope it's not a wind up?!?!

My mum always cooked the Turkey upside down. I just get crowns now, loads of butter and thyme under the skin and you’re laughing. That and a gammon joint that’s currently in the slow cooker with a bottle of Coca-Cola, jobs a good’un!

The turkey must be rested but I would not rest it for half the cooking time. Make sure the juices run clear - stick a skewer into the thickest part of the breast and see what colour the juices are.
It depends on the size. But 45 mins to 1 hour should do it unless it's a real whooper.

Moisture is driven out of the meat when roasting, resting allows the moisture back into the fibres and it will be more tender.

Hope it works out and have a good day.

I always cook it right way up then upside down then back the right way up. Always good.
