Crikey, that's a tough question.
Gomez - Bring It On would definitely be one of my three.
Probably Ben Folds Five's self-titled as well.
And the remaining place would be a shootout between Toto, The Left Banke, The Feeling and Damien Rice.
But I've probably forgotten some others too.

Almost the same as @Lefty but Rattlesnakes by Lloyd Cole & The Commotions instead of (the very good) Fatherson debut.
'On Fire' is a great album but it was their 2nd LP! 'Today' was their debut!
The Bats - Daddy's Highway. Like an album full of A-sides, total jukebox of a record!
The Pipettes - We Are The Pipettes. Maybe a little throwaway but as above!
Top - Emotion Lotion. Terrible band name, cover and title but the record is fantastic! It's like The Stone Roses-lite, great record!
