What's your favourite Cheese?

Too many to choose one, but like finny a well-aged Comté, plus a good goat's cheese, demi-sec. One of my favourite uses of cheese in cooking is Roquefort with fresh walnuts from the garden and crème fraîche on a galette (buckwheat pancake).

Roquefort tends to be the blue cheese we go to in France. We did eat a lot of goat and Brebicet ewe cheese this year.
 
With goats cheese I only liked it cooked with something sweeter such as caramelised red onions I don't really like it raw.
Yes, it's an acquired taste. When I first went to France the girlfriend's dad made me eat his own extra-strong goat's cheese with little worms wriggling in it. Took me years to try it again.

Good shout re caramelised red onions - they turn a bog standard croque monsieur (ham and cheese toastie for the brits) into something else altogether.
 
Epoisses or ripe Camembert in the gooey, liquidy range. But a beautiful uber cheesey cheese that gives Parmesan flavour with a melt in mouth texture is Provolone. And Dolcelatta of course. Man I love cheese.

I gnaw parmesan down to the rind, and if the rind isn't to tough I'll attempt that too.

A bit of a cheesy question.
My favourite cheese is Red Leicester and I bought a small block from the Morrisons Deli counter yesterday and it is absolutely delicious it's called Belton Farm red fox crunchy Red Leicester it is one of the best cheeses I have tasted in a long time.
So I just thought I would ask what other people's favourite is and get some recommendations in the process.
I had a smoked red Leicester from tesco the other week which was nice.
