Roquefort tends to be the blue cheese we go to in France. We did eat a lot of goat and Brebicet ewe cheese this year.Too many to choose one, but like finny a well-aged Comté, plus a good goat's cheese, demi-sec. One of my favourite uses of cheese in cooking is Roquefort with fresh walnuts from the garden and crème fraîche on a galette (buckwheat pancake).
With goats cheese I only liked it cooked with something sweeter such as caramelised red onions I don't really like it raw.Roquefort tends to be the blue cheese we go to in France. We did eat a lot of goat and Brebicet ewe cheese this year.
Yes, it's an acquired taste. When I first went to France the girlfriend's dad made me eat his own extra-strong goat's cheese with little worms wriggling in it. Took me years to try it again. With goats cheese I only liked it cooked with something sweeter such as caramelised red onions I don't really like it raw.
I gnaw parmesan down to the rind, and if the rind isn't to tough I'll attempt that too.Epoisses or ripe Camembert in the gooey, liquidy range. But a beautiful uber cheesey cheese that gives Parmesan flavour with a melt in mouth texture is Provolone. And Dolcelatta of course. Man I love cheese.
When you're aged and toothless, as we all shall be, suck on some Provolone.I gnaw parmesan down to the rind, and if the rind isn't to tough I'll attempt that too.
